Greek Chicken Burgers

  If there is one thing that you need to know about me, it is that I am obsessed with Mediterranean food! I love the flavors, the freshness, and the simplicity. These burgers are quick and easy- only 20 minutes to make and are great paired with the  oven roasted fries recipe. So let's get down to the ingredients. Peppers, onions, feta cheese, Kalamata olives, and olive oil are mixed in with ground chicken to create a flavorful burger patty. Cook for 3-5 minutes per side and BOOM, easy, healthy dinner! Remember, if you're making any of these recipes, be sure to snap a picture and tag me! Ingredients:
  • 1 pound ground chicken (see notes)
  • 1/4 red onion, diced 
  • 1/4 bell pepper, diced
  • 3 kalamata olives, diced
  • 1/4 cup feta cheese
  • 1 tablespoon olive oil
  • 2 tablespoons flour
  • 2 tablespoons bread crumbs
  • 1/2 teaspoon each: Salt, pepper, Italian seasoning blend
  • 1/4 teaspoon each: cumin, oregano
  • 1-2 tablespoons olive oil (for cooking)
Instructions:

1. Remove your chicken from packaging and place into a large bowl. Add onion, pepper, olives, feta and olive oil. Mix well.

2. Add flour, breadcrumbs, and seasonings to the chicken. Mix well.

3. Heat 1-2 tablespoons of olive oil over medium heat. Shape chicken into patties. I made 4 patties with 1 pound of ground chicken. However; you feel free to make them as big or small as you would like!

4. Cook for 3-5 minutes per side, until you develop a nice crust on either side and the internal temperature is 165 F.

Some nice crust action going on here. 

5. Serve on toasted buns with lettuce, tomato, onion, hummus/tzatziki, cucumbers/pickles, whatever toppings you'd like, really!

Here's the completed burger! We ate ours on bread, because we didn't have buns.

Notes:

  1. If you don't have ground chicken, take a couple of chicken breasts and throw them in the blender. Pulse until they have a ground chicken consistency.
