Cilantro Lime Rice
You know that bomb rice that you get at Chipotle? Well, here's a recipe to get very similar, cilantro lime rice at home. This rice is perfect for a side or the base of a taco/southwestern bowl. It's super easy to make and a nice way to jazz up boring, plain rice. This can also be prepped ahead and sit in the fridge, then reheated when you need it! - 2 cups of dry rice, cooked according to package directions (I used brown)
- 1/2 cup cilantro, chopped (or just a couple of big handfuls)
- Juice of 1 lime
- 3 tablespoons unsalted butter
- Salt, pepper, and garlic powder, to taste
1. Cook your rice according to package directions. I used brown rice and cooked it in my instant pot.
2. While the rice is cooking, chop your cilantro.
3. Once the rice is finished cooking. Fluff gently with a fork.
4. After fluffing the rice, add butter, cilantro, lime juice, and seasonings. Continue to fluff and mix gently until the butter is melted.
5. Serve and Enjoy! :)
