Thai Inspired Tuna Cakes with Oriental Salad

 My husband loves seafood, but unfortunately for him, I am not a huge seafood lover. This is a meal that we both can agree on! Slightly spicy tuna cakes with a  crunchy salad is just a great combo. These tuna cakes are made from canned tuna, jazzed up with sriracha, lime, and cilantro to add some freshness. This is a satisfying yet refreshing and light meal. Ingredients:
For the Tuna Cakes
  • 1 can of tuna
  • 1 egg
  • A couple dashes of sesame oil
  • 1 teaspoon sriracha
  • 1 teaspoon soy sauce
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 3 green onions, thinly sliced
  • 1 handful freshly chopped cilantro
  • Juice of half a lime
  • 2 tablespoons flour
  • 6 tablespoons panko breadcrumbs
  • 6 tablespoons flour
  • Salt and pepper, to taste
For the Salad
  • 2-3 handfuls baby greens/spring mix
  • 1 head romaine lettuce
  • 1/2 cucumber, chopped
  • 1 bell pepper (any color), sliced
  • 1 avocado
  • 1 green onion, sliced
  • 1 handful freshly chopped cilantro
  • 1/2 can mandarin orange segments
For the Dressing
  • 1 tablespoon mandarin orange liquid
  • 1 tablespoon sriracha
  • A few dashes of sesame oil
  • 1 teaspoon honey
  • 1 teaspoon soy sauce
  • 1 teaspoon rice wine vinegar
  • Juice of half a lime
  • 1/4 teaspoon each: salt, pepper, garlic, ginger
  • 1 tablespoon olive oil
Instructions:

1. Drain liquid from the tuna and place in a bowl. Add egg, sesame oil, lime juice, sriracha, soy sauce, salt, and pepper. Stir until well combined. Add cilantro and scallions. Stir until well combined.

2. Add flour and panko 1 tablespoon at a time. Stir well after adding. Once the mixture is able to stick together, form into 4 "cakes". If the mixture still seems wet, add more flour and panko.

Here's what mine looked like before cooking. 
3. Heat 1-2 tablespoons of olive oil or sesame oil over medium heat. Place tuna patties into the pan and cook 3-5 minutes per side until golden brown.

4. While the tuna cakes are cooking, prepare the salad and the dressing.

Notes:

  1. Feel free to change up the vegetables in the salad to use up what you have or to adjust to your liking!
