Breakfast Bars

If you're ever looking for a quick breakfast or snack, these are it! They take literally 5 minutes to make and 10 minutes to chill and then they are good to go. These are packed with good for you ingredients like peanut butter, oats, coconut, and dried fruit. I like to top them with a little chocolate, because why not? Ingredients:

  • 1 cup oats
  • 1/4 cup sweetened shredded coconut
  • 1/8 cup dried cranberries
  • 1 tablespoon honey
  • 1 tablespoon maple syrup
  • 1/4 cup peanut butter
  • 2 tablespoons dark chocolate chips
Instructions:

1. In a bowl combine oats, coconut, cranberries, honey, maple syrup, and peanut butter in a bowl. Mix until the peanut butter is evenly distributed.

2. Put the oat mixture into a rectangular baking dish lined with wax paper. Press down until it is about a 1/4-1/2 inch thick rectangle.

3. Put the chocolate chips into a microwave safe container and microwave in 15 second increments until completely melted. Spread melted chocolate on top of the bars.

4. Cover the bars and place in the refrigerator for 10 minutes to chill. Cut into desired shape and serve. Store covered in the refrigerator until eaten.

Notes:

1. Feel free to shape these into balls if you prefer.
2. Use any type of dried fruit you have on hand. I had cranberries, but raisins would be good too!
3. Feel free to add any other ingredients you like- dried nuts, chia seeds, flax seed, hemp hearts, etc would be a delicious addition!
