Asian Style Chicken Lettuce Wraps

Last night we decided to try something new. These lettuce wraps turned out absolutely amazing! The best part? Only 15 minutes to make! I know that they are not typically served with rice, but because I was hungry and my body was in need of carbs, we added some rice. These were extremely flavorful and delicious. Ingredients:

  • 1 pound ground chicken
  • 4 cloves of garlic, minced
  • 1 teaspoon grated ginger
  • 1/2 onion, minced
  • 1 bell pepper (any color), diced
  • 1/2 teaspoon Korean chili flake (or crushed red pepper flakes)
  • 1/2 teaspoon salt
  • 1 tablespoon peanut butter
  • 1 tablespoon+1 teaspoon sesame oil
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon honey
  • 2 tablespoons brown sugar
  • 1 tablespoon oyster sauce
  • 2 teaspoons sweet chili sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ginger powder
  • Your favorite lettuce for serving (we used iceberg and romaine, but feel free to use what you like!)
  • Optional: Your favorite rice
Instructions:

1. In a bowl combine peanut butter, 1 tablespoon sesame oil, rice wine vinegar, honey, brown sugar, oyster sauce, sweet chili sauce, garlic powder, and ginger powder. Whisk until well combined. *microwave in 20 second intervals if you can't get the peanut butter to mix in* Set aside.

2. Heat 1 teaspoon of sesame oil in a pan over medium heat. Add onions, pepper, garlic, ginger, and chili flake. Cook for 1-2 minutes until the onions and pepper are soft. Then add your chicken.

3. Cook until your chicken is browned and completely cooked through. Then add the sauce from step 1 to the pan and cook for 2 minutes until the sauce has thickened and coated all the chicken.

4. Serve in lettuce leaves. Optional- serve with rice. Top with sriracha and scallions.


Notes:

1. Feel free to substitute chicken for any other type of ground meat that you like or have on hand.
