Mojo Chicken Plate
Mojo is a delicious Caribbean citrus-garlic marinade. It is great for marinating everything from chicken thighs or wings, to fish, to ribs. You really can't go wrong with this! I serve my mojo chicken with black beans, cilantro lime rice, and maduros (sweet plantains). This marinade is NOT completely traditional, but it tastes awesome.

Ingredients:
For Marinade:
- 1 package of bone in, skin on chicken thighs (you can use chicken breast if you prefer!)
- 5-6 cloves chopped garlic
- Juice of 1 lime
- Juice of 1/2 an orange
- 1/4 cup olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 large pinch dried oregano
- 1 handful fresh chopped cilantro
- a few dashes of your favorite hot sauce
1. Add all the ingredients for the marinade to a bowl and whisk well. Transfer to a large ziplock bag. Place chicken in the bag. Marinate in the fridge for a minimum of 30 minutes and up to 8 hours.
2. When ready to cook, take chicken out of the fridge while the grill preheats to a medium high heat. When grill is ready, add chicken and cook for 2-3 minutes (skin side down) over direct flame.
3. Turn the grill down and cook chicken over indirect heat until internal temperature reaches 165 degrees.
4. Rest chicken for 10 minutes before serving.
For the Rice:
- Your favorite rice (I like brown jasmine)
- 2-4 cloves chopped garlic
- 1 handful fresh chopped cilantro
- Juice of 1 lime
- 2-3 tablespoons of butter
- Salt and pepper to taste
1. Add rice and water to a pot according to package instructions. Add 2-4 cloves of garlic to the rice when the water boils. Cook according to package directions.
2. When the rice is done cooking, fluff, then add the rest of the ingredients and stir until butter is melted and cilantro is distributed evenly throughout the rice.
For the Beans:
- Your favorite canned black beans
- Drizzle of olive oil
- 2 cloves chopped garlic
- 1/2 onion chopped
- 1/2 bell pepper (any color) chopped
- 1/4 teaspoon cumin
- salt and pepper to taste
1. In small pot over medium heat, add a good drizzle of olive oil, garlic, onion, and bell pepper. Cook until soft.
2. Add the entire can of black beans with the liquid to the pot and stir well. Add cumin and salt and pepper to taste.
For the Maduros:
I cheat a little for this one and use frozen maduros. Just microwave following package instructions :)
To serve:
Put everything on a plate, garnish with more cilantro, and enjoy :)
