Big Birthday Cake Cookies

If you've seen my last recipes, you'll know that I have been on a quest to make thick, fat, cookies. While in Walmart this past weekend, I saw that they had confetti baking chips. Basically, white chocolate chips with sprinkles in them. And it got me thinking, what if I made a birthday cake big cookie?! After Payton made dinner last night, I decided that making birthday cake cookies just had to be done! The base is the same as my other cookies, but the mix ins are a little bit different! Prep Time: 15 minutes

Chill Time: 2-24 hours

Cook Time: 18-22 minutes

Servings: 4-6 Cookies (depending on how big you like them)

Ingredients:

  • 2 1/2 cups all purpose flour
  • 1 teaspoon salt
  • 3 teaspoon baking powder
  • 2 sticks softened unsalted butter
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cup confetti chips (or white chocolate chips)
  • 1/2 cup sprinkles

Instructions:

1. In a large bowl, cream together butter, both sugars, and vanilla using a mixer until well combined and fluffy.

2. Stir in 2 eggs until well combined.

3. In a separate bowl, mix together flour, salt, and baking powder until well combined.

4. Add the flour mixture to the butter mixture in 2-3 small batches. Mix with mixer until well combined, use a spatula to scrape the sides of the bowl as needed. Mix until just combined. It is very important to not overwork the dough.

5. Stir in confetti chips and sprinkle gently using a spatula.

6. Scoop out 1/3-1/2 cup of dough and shape into a large ball. *dough will be soft, if it is too difficult to work with, chill dough at this stage, then shape* Place on a greased cookie sheet about 4 inches part from.

7. Chill shaped cookies in the refrigerator for up to 2 hours or in the freezer for 30 minutes. *THIS IS IMPORTANT TO KEEP THE COOKIES THICK*

8. While the cookies are chilling, preheat the oven to 375 F.

9. Bake cookies at 375 F for 15-20 minutes. Cookies should be golden brown on the bottom and slightly golden brown on the top with a soft center.

Notes:

1. If you get nervous like me, feel free to use a spatula to make sure the cookies aren't stuck to the pan before putting them into the oven .

2. Allow cookies to cool before enjoying.

3. Feel free to increase baking time as needed to cook the cookies to your liking.

4. Feel free to experiment with cookies by placing small candies into the center before shaping and baking.

5. Store leftover cookies in a covered container on the counter.
