BEST biscuits and gravy (BTBG)

Let me just go ahead and say.... this breakfast is good for your SOUL! That's what we say in our house when you know what you're eating isn't "healthy" but it tastes SO good and makes you happy. Biscuits and gravy has always been one of my favorite breakfast foods. One year when I was in college, I decided to have a breakfast feast with some of my favorite boys, and that's when my biscuits and gravy recipe was born. Ingredients:

For the biscuits:
  • 1 stick COLD butter *I put in the freezer the night before*
  • 2 cups all purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 3/4 cup whole milk
  • 1 tablespoon of butter
For the Gravy:
  • 1 roll hot breakfast sausage
  • 1/4 cup flour
  • 2 cups milk
  • 1 tablespoon butter
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon each salt and pepper
Instructions:

1. Preheat oven to 450 F.

2. Start making your biscuits. Put the flour, baking powder, sugar, and salt into a bowl and mix until well combined.

3. Use a cheese grater to grate your COLD butter into small pieces. Put your small pieces of butter into the flour and mix until evenly distributed.

4. Add your milk and mix until dough starts to come together.

5. Melt 1 tablespoon of butter and brush onto your desired baking sheet.

6. You can choose to roll out your biscuits and cut them nicely, but I am usually too impatient to do that. I just take about 1/2 cup of the dough and shape it into a biscuit shape, then put it on the pan. Repeat process until all the though has been used.

7. Put the pan in the refrigerator or freezer for 10-15 minutes before baking.

Here's  how my biscuits looked before baking.


8. Bake biscuits for 12-14 minutes, until golden brown. Optional:Brush with any remaining butter when they come out of the oven!

9. While the biscuits bake, we make gravy! Start by melting 1 tablespoon of butter in a big pan over medium heat. Add in your sausage and crushed red pepper flakes. Cook until sausage is brown and cooked all the way through.

10. Add flour directly to the pan with sausage. Stir well until flour is well combined and cook for 1 minute.

11. Add your milk and reduce heat to medium low. I slowly drizzle in between 1/4 -1/2 cup at a time. Mix until it becomes thick, then add more milk. Repeat until all the milk has been used.

12. Add garlic, salt, and pepper. Allow your gravy to thicken again.

Here's what my gravy looked like when it was done.
Notice how it sticks to the spoon, this means that it is nice and thick :)

13. Add gravy on top of biscuits when they come out of the oven and enjoy!


              

Notes:
1. If you don't like spicy, use mild, regular breakfast sausage instead.
2. Optional: Top with scallions before serving.
